How to Bake Cookies with Desiccated Coconut?
You have to make sure that all ingredients are prepared well and clean.
Here are the ingredients:
∙ 1 cup (2 sticks unsalted butter, softened already)
∙ 1 cup granulated sugar
∙ 2 large eggs
∙ 2 teaspoons of pure vanilla extract
∙ 2 ½ cups of all-purpose flour
∙ ½ teaspoon baking powder
∙ ½ teaspoon salt
∙ 1 ½ cups of desiccated coconut
Below is the instruction on how to do the coconut cookies:
- First, you have to preheat the oven, set until it reaches 350⁰F or equivalent to 180⁰C.
- Second, in a large bowl, put the unsalted softened butter then pour the granule sugar and mix well together. You can use a stand mixer to easily mix them together until it becomes light and fluffy.
- Then, beat the egg in the bowl and add the pure vanilla extract, mix them accordingly. The vanilla extract should stir well with the other ingredients.
- Get another bowl; pour all together the all-purpose flour, baking powder and salt. Whisk them altogether.
- After that, combine the stirred sugar to the mixed dry ingredients to the creamed unsalted butter mixed with sugar.
- Then, after blending them well, mix the desiccated coconut to the mixed ingredients. The texture should be slightly sticky and all ingredients should be incorporated well.
- Scoop the dough with your ice cream scooper to evenly size the dough. Then, shape them in a circle or depending on your preferred shape.
- Slightly flatten the cookie dough to cook it properly.
- Prepare the tray for baking; put a baking paper on the baking tray, then place the flatten cookie dough on the baking tray with baking paper.
- Check the preheat oven, if it is heated evenly, bake your cookie dough 10-12 minutes until you notice the golden edges of the cookies.
- When it’s done, let it cool for few minutes.
- Once the cookies are cooled, transfer them to your preferred container and enjoy the yummy taste of desiccated coconut cookies.
